Radici Project and Joni Restaurant Join Forces for One-Night Culinary Collaboration in Toronto
Toronto’s Little Italy will host a special chef collaboration this summer. On July 29, 2026, Radici Project will welcome Jonathan Williams, Executive Chef of Joni Restaurant at Park Hyatt Toronto, for a one-night-only dinner.
Chef Emiliano Del Frate, Chef and Co-Founder of Radici Project, will lead the event with Williams. Together, the two chefs will create a multi-course menu focused on seasonal Canadian ingredients, careful preparation, and modern cooking.
The dinner will take place at Radici Project, located at 588 College Street. In addition, guests can choose between two tasting menu options created for the collaboration.

Two Culinary Perspectives Come Together
The collaboration brings together two chefs with training in Europe, Japan, and Canada.

Chef Emiliano Del Frate has worked in kitchens such as Noma in Copenhagen, Gucci Osteria Tokyo, ADMO Paris, Don Alfonso 1890, and DaNico. At Radici Project, he works with co-founder Kayo Ito to build menus that connect Italian and Japanese influences with Canadian ingredients.

Meanwhile, Chef Jonathan Williams leads the culinary program at Joni Restaurant at Park Hyatt Toronto. His cooking focuses on local sourcing, sustainability, and seasonal produce. He has also worked in Michelin-recognized restaurants across England, New York, and Canada.
A Menu Built Around Seasonality and Canadian Ingredients

For one evening, Del Frate and Williams will create a tasting menu that reflects both of their cooking styles.
The dinner will highlight ingredients available during the season. As a result, the menu will focus on freshness, technique, and the relationship between Canadian producers and the kitchen.
Guests can choose between two dining options:
- Essence Menu: $120 per person Plus tax and gratuity
- Immersive Menu: $195 per person Plus tax and gratuity
In addition, guests can add alcoholic or low-proof beverage pairings for an extra cost.
