Cheesecake Batter:

  • 907 grams cream cheese, softened (4 x 8 oz packages)
  • 1 cup brown sugar (200 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 1/2 cup sour cream (120 grams)
  • 1 cup Biscoff cookie butter (240 grams)
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 4 large eggs, room temp

For Decorating:

  • 1/2 cup Biscoff spread
  • 1/4 cup Biscoff cookies, crumbled

For the biscuit base 350g biscuits (I mixed chocolate digestives and biscoff biscuits) 100g melted butter For the cheesecake 800g (full fat) cream cheese 150g icing sugar 1 tsp vanilla extract 150ml double cream (whipped) 80g crushed biscoff biscuits For the ganache 150g white chocolate chips 100ml double cream 1 tbsp biscoff spread (Microwave on 500w in 30 sec intervals until melted) Before putting the ganache, let the cake set in the fridge overnight

1. The Crust

  1. Preheat your oven to 325ºF.
  2. Crush the Biscoff cookies in a food processor until they turn into fine crumbs.
  3. Combine the crumbs with melted butter and mix until well blended.
  4. Press this mixture firmly into the bottom of an 8” or 9” cheesecake pan (if using an 8” pan, ensure it’s deep).
  5. Bake the crust for 10 minutes, then remove and let it cool completely.

2. The Cheesecake Batter

  1. Using a mixer, beat the cream cheese on medium speed for 3 minutes until smooth.
  2. Add the brown and granulated sugars, beating for another 2 minutes. Scrape down the sides of the bowl and beat for 30 more seconds.
  3. Add the sour cream and Biscoff cookie butter, mixing until combined. Scrape the bowl thoroughly.
  4. Mix in the vanilla and salt. Scrape the bowl again to ensure there are no lumps.
  5. Add the eggs, one at a time, mixing just until incorporated to avoid overmixing (this helps prevent cracking).

3. Bake the Cheesecake

  1. Pour the batter over the baked crust. If your pan has a tendency to stick, grease the sides with oil beforehand.
  2. Wrap the bottom of the pan in several layers of foil to prevent water from seeping in.
  3. Place the pan in a larger roasting pan and pour hot water into the roasting pan to create a water bath. This step is crucial to achieving a crack-free cheesecake.
  4. Bake in the preheated oven for 60-70 minutes. The edges should look set, but the center should jiggle slightly.
  5. Turn off the oven and leave the cheesecake inside for 1 hour.
  6. Transfer the cheesecake to the fridge and chill for at least 6 hours (overnight is even better!).

4. Decorate Like a Pro

  1. Melt the Biscoff spread in the microwave for a few seconds until it’s runny. Drizzle it over the chilled cheesecake and smooth it out with a spatula.
