Step 1: In a large sauté pan or pot, combine the cherry tomatoes, garlic, olive oil, salt, pasta, lemon zest, red pepper flakes, and water. Stir occasionally to prevent sticking.

Step 2: Once boiling, reduce slightly and let simmer. Stir often and cook until the pasta is al dente and most of the water has been absorbed—about 9–12 minutes.

Step 4: Next, stir in the kale and arugula, letting them wilt from the residual heat. Then fold in the basil and vegan parmesan.

Step 5: Let everything sit for a minute so the flavors come together. Lastly, taste and adjust seasoning before serving.

Swaps and Variations

This recipe plays nice with tweaks. If you’re not into spaghetti then try linguine, fettuccine, or even whole wheat pasta. Gluten-free options also work—just keep an eye on the cook time.
