Ingredients

Cupcakes (Yields 12)
  • 9 tbsp unsalted butter (room temperature)
  • ¾ cup white sugar

Frosting
  • 1 cup confectioners’ sugar
  • 1 tbsp unsalted butter (room temperature)
  • 1 tbsp milk
  • 1 drop of brown food coloring
Decoration
  • 6 vanilla wafer cookies (e.g., Nilla®)
  • 12 red jelly beans
  • 24 candy eyeballs
  • 24 chewy chocolate-flavored candies (e.g., Tootsie Rolls®)
  • 24 pretzels

Instructions

1. Prepare the Cupcakes
  1. Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, beat the butter, sugar, and vanilla extract with an electric mixer until smooth and creamy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Gradually fold in half the flour and ¼ cup milk. Repeat with the remaining flour and milk until the batter is smooth.
  5. Spoon batter into the muffin cups, filling each ¾ full.
  6. Bake for 18 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely (about 1 hour).
2. Make the Frosting
  1. Beat confectioners’ sugar, butter, and milk with an electric mixer until smooth.
  2. Add food coloring and mix until the frosting is uniformly brown. Adjust with more drops of coloring if needed.
3. Decorate the Cupcakes
  1. Spread a thin layer of frosting on each cooled cupcake.
  2. Break vanilla cookies in half and place one half on each cupcake for the mouth.
  3. Use a bit of frosting to attach a red jelly bean as Rudolph’s nose to the cookie.
  4. Stick two candy eyeballs into each cupcake.
  5. Break pretzels into antler shapes and insert two at the top of each cupcake.
  6. Shape chewy candies into ears and place two on the sides of each cupcake.
