Special Equipment

  • Stand mixer with whisk attachment
  • Large piping tips (e.g., Wilton 1M)
  • Piping bags
  • Half sheet pan
  • Silicone mat or parchment paper

Ingredients

Pavlova
  • 4 large egg whites (room temperature)
  • ½ tsp cream of tartar
  • 1 cup granulated sugar
  • 2 tsp cornstarch
Toppings
  • Homemade whipped cream
  • Berry compote
  • Fresh berries (e.g., strawberries, blueberries, raspberries)
  • Fresh mint (optional)

Instructions

  1. Preheat the Oven:
    • Preheat to 225°F (110°C).
  2. Prepare the Meringue:
    • In the bowl of a stand mixer fitted with the whisk attachment, whisk egg whites and cream of tartar on medium speed until frothy.
    • Gradually add sugar, 1 tablespoon at a time, while increasing the speed to medium-high. Continue beating until stiff peaks form (5-6 minutes).
  3. Incorporate Cornstarch:
    • Gently fold in the cornstarch, taking care not to deflate the meringue.
  4. Shape the Pavlovas:
    • Spoon the meringue into a piping bag fitted with a large tip.
    • Optional: Trace 3-inch circles on parchment paper, place the silicone mat over it, and pipe meringue mounds within the circles. Leave at least 2 inches of space between mounds.
    • Use a spoon to create a slight hollow on top of each mound for toppings.
  5. Bake and Dry:
    • Bake at 225°F for 1 hour.
    • Turn off the oven (do not open) and let the pavlovas dry for another 1-2 hours.
    • The pavlovas should be fully dry on the outside and peel off the mat easily.
  6. Decorate and Serve:
    • Top each pavlova with a dollop of whipped cream, a drizzle of berry compote, and fresh berries. Garnish with mint leaves if desired.

Tips for Success

  • Room Temperature Eggs: Ensures better volume when whipping.
  • Gradual Sugar Addition: Helps the meringue maintain stability.
  • Drying Time: Essential for achieving crisp exteriors and soft interiors.
