- Prep Time: 10 minutes
- Chill Time: 1 hour
- Total Time: 1 hour 10 minutes
Ingredients
- 2 cups (180g) digestive biscuits or vanilla wafers, crushed
- ¾ cup (70-80g) toasted hazelnuts (or other nuts), coarsely chopped
- 1 cup + 2 tablespoons (200g) dark chocolate, melted
- ¼ cup + 2 tablespoons (90g) unsalted butter
- 6 tablespoons (90ml) whole milk
- A splash of alcohol (optional): Kahlua, Amaretto, brandy, or rum
- Powdered sugar (for coating)
Instructions
- Prepare the Dry Mix:
- Place the biscuits in a large ziplock bag and crush with a rolling pin to create coarse crumbs.
- Transfer crumbs to a large bowl and stir in the chopped nuts.
- Melt the Chocolate:
- In a medium bowl, combine the dark chocolate and butter. Melt using a double boiler or microwave in short intervals, stirring frequently until smooth.
- Add the milk and alcohol (if using), and stir until combined.
- Combine Mixtures:
- Pour the melted chocolate mixture into the bowl with the biscuit crumbs and nuts. Mix thoroughly until evenly combined.
- Shape the Salami:
- Spread the mixture onto a sheet of parchment paper or plastic wrap. Use a spatula to shape it into a log.
- Roll up the parchment/plastic wrap tightly around the log, twisting the ends like candy.
- Chill:
- Refrigerate the log for at least 1 hour, or until firm.
- Finish and Serve:
- Remove the log from the wrap. Dust generously with powdered sugar, coating all sides for a “salami” effect.
- Brush off any excess sugar. Slice into pieces and serve.
Storage Tips
- Refrigerator: Keep wrapped in plastic or stored in an airtight container for up to 1 week.
- Freezer: Store in the freezer for up to 3 months. Let sit at room temperature for a few minutes before slicing or serving.
