Ingredients

  • 1 sheet puff pastry (200g)
  • 200g Brie
  • Cranberry sauce
  • Chopped nuts (I used walnuts)
  • 1 egg yolk + 1 tsp milk (for egg wash)
  • Honey for drizzling
  • Fresh rosemary (optional)
  • Salt & pepper to taste

Spread some cranberry sauce and the layer the cheese. Roll it up carefully and slice down the middle and roll up each side tucking the end underneath as shown in the video. It will make 8. Add to a baking sheet Sprinkle with salt and peeper and then brush with the egg wash. Bake for 30-35 minutes until crunchy and flakey. Drizzle with honey as soon as they’re out of the oven. 1] Prepare the Brie
  1. Chill the Brie: Make sure your Brie is cold. Place it in the freezer for about 30 minutes before starting to make slicing easier.
  2. Slice the Brie: Use a vegetable scraper to remove some of the white coating, then slice the cheese or cube it thinly.
2] Prepare the Pastry
  1. Preheat the oven to 180°C (350°F).
  2. Cut the Puff Pastry: Roll out the sheet of puff pastry and cut it into 4 rectangles by slicing down the middle and each side in half.
3] Assemble the Flowers
  1. Spread the Cranberry Sauce: On each pastry rectangle, spread a small amount of cranberry sauce.
  2. Layer the Brie: Add the thinly sliced brie on top of the cranberry sauce.
  3. Add Nuts: Sprinkle with your choice of chopped nuts (I used walnuts) for an added crunch.
  4. Roll and Shape: Carefully roll up each rectangle, then slice it down the middle. Roll up each side, tucking the ends underneath to form a flower shape. Repeat for the remaining rectangles to make 8 pieces.
4] Bake the Pastries
  1. Place on a Baking Sheet: Arrange the pastries on a baking sheet lined with parchment paper.
  2. Egg Wash: In a small bowl, whisk together 1 egg yolk and 1 tsp milk to create an egg wash. Brush the pastries with the egg wash, and season with a pinch of salt and pepper.
  3. Bake: Bake the pastries for 30-35 minutes until golden, crunchy, and flaky.
5] Drizzle with Honey
  1. Finishing Touch: As soon as the pastries come out of the oven, drizzle with honey for a touch of sweetness.
  2. Garnish (Optional): Garnish with fresh rosemary for a festive touch.
