What is the A5 Wagyu Shabu Shabu & Sushi Dinner?

For one night only, Chef Ryotaro Matsuzaki will present a 9-course tasting menu that brings together two well-known Japanese dining traditions: shabu shabu and sushi.

The menu focuses on seasonal produce and premium Japanese ingredients, taking guests through a variety of seafood, wagyu, sushi, hand rolls, and dessert. Throughout the evening, diners can expect a balance of warm and cold courses that highlight different flavours, textures, and preparation techniques.

What is Shabu Shabu?

Shabu shabu is a popular Japanese style of dining that centres around a pot of simmering broth. Thinly sliced premium meat is gently swished through the broth before being enjoyed with vegetables and dipping sauces. The name comes from the swishing motion used while cooking the meat.

Sushi offers another expression of Japanese cuisine by pairing seasoned rice with fresh seafood and carefully prepared ingredients. This tasting dinner combines both dining styles into a single multi-course experience.
