Before opening its first restaurant this September, Renso Pho-Potle is giving Toronto food lovers an early preview of what is coming. The launch is also introducing a new chapter for Vietnamese fast-casual dining in Canada.

As Canada’s first-ever “pho-potle” concept, Renso Pho-Potle is introducing a new way to enjoy Vietnamese cuisine. The concept combines traditional pho flavours with a customizable dining experience designed for today’s fast-paced lifestyle.

Guests can build their own bowls using authentic ingredients and traditional flavours. At the same time, the fast-casual format provides a convenient dining experience.

Through personalization, quality, and accessibility, Renso Pho-Potle offers a modern approach to enjoying one of Vietnam’s most recognized dishes.

First Stop: Taste of Vietnam Festival

To celebrate its upcoming launch, Renso Pho-Potle will join the summer festival circuit through its pop-up brand, Renso Ko Bites. The pop-up will bring signature flavours directly to the public before the restaurant officially opens on Queen Street West later this year.

From July 16–18, visitors attending Toronto’s Taste of Vietnam Festival at Nathan Phillips Square will have the first opportunity to experience Renso Pho-Potle. The event will showcase the flavours behind Canada’s first pho-potle concept.

As Ontario’s largest celebration of Vietnamese culture, food, and fashion, the festival provides an ideal setting for Renso Pho-Potle’s first public showcase.

Guests can sample a menu inspired by the restaurant’s upcoming offerings, including:

  • Seasoned chicken or beef skewers
  • Shrimp tacos
  • Saigon Street Bánh Mì sandwiches
  • Fresh coconut water
  • Traditional Cà Phê Sữa Đá
  • Tropical drinks including Golden Mango and Guava Tropics

Festival guests will also experience Renso’s signature sauces. The sauces feature mild, spicy, and savoury flavours inspired by different regions of Vietnam.

Additionally, Renso Ko Bites is one of the few festival vendors offering both halal and non-halal menu options.

A New Chapter for Vietnamese Fast-Casual Dining

Customizable bowls have become popular across North America. However, Renso Pho-Potle takes a distinctly Vietnamese approach.

Opening this September in Toronto, the concept allows guests to create meals based on their personal preferences. Guests can choose their preferred broth, protein, rice, toppings, and sauces to build their own personalized meal.

The menu will feature traditional broth-based pho and innovative dry pho options. Together, these choices create a dining experience that celebrates authentic Vietnamese flavours while offering flexibility and convenience.

For founder and Chairwoman Linda Vu, the summer festival tour represents years of planning and preparation. The goal is to introduce the community to the idea behind Renso Pho-Potle before the official opening.

“Before we open our doors later this summer, we want to give people a first taste of what Renso Pho-Potle is all about bold Vietnamese flavours, fresh ingredients, and a fun, customizable dining experience,” says Vu. “These festival appearances are a chance to introduce our concept to the community and celebrate the culinary traditions that inspired it.”
