A familiar address on Bayview Avenue has a new identity this season. The former Pii Nong Thai location has reopened as Chon Modern Thai Cuisine, a project led by the same culinary team but built around a different approach to Thai cooking.

A New Direction After Pii Nong’s Closure

Pii Nong’s Bayview restaurant served its last dinner on October 19, 2025, closing quietly before beginning its transition into Chon. The change wasn’t simply cosmetic. The team described the rebrand as an opportunity to rethink what they wanted to offer—shifting away from casual staples and leaning into dishes tied to specific regions of Thailand.

The name “Chon,” which means spoon in Thai, reflects the idea of sharing food and slowing down over a meal. It’s meant to signal a more intentional dining experience than Pii Nong’s fast-casual style.

What the New Menu Looks Like

Chon’s opening menu draws from older recipes and traditional techniques but presents them with a lighter, more modern touch. The lineup includes appetizers with crisp textures, salads built around herbs rather than heavy dressings, curries that highlight regional spice blends, and a number of grilled or fried seafood dishes.

The format is still approachable—rice and noodle offerings remain—but the dishes are plated with more detail, and the flavours are layered rather than simplified. The restaurant also notes that items may shift during the soft-opening phase as the team fine-tunes the lineup.

Soft Opening and Daily Service

Chon is currently in its soft-opening period, operating 11:00 AM to 10:00 PM each day. Guests can dine in, order takeout, or use delivery apps. The Bayview/Leaside BIA lists the space as warm and relaxed, with a focus on mid-casual dining rather than formal service.

The neighbourhood has been quick to take notice; Bayview’s dining strip has grown steadily over the last few years, and Chon adds another option for diners looking for something beyond the usual pad thai or green curry.

A Notable Addition to Midtown’s Food Scene

Toronto has seen a wave of restaurants highlighting regional Asian cooking, and Chon fits into that momentum. With chefs who already understand the area’s customer base—and a menu designed to offer something different from typical Thai takeout—the restaurant is positioned to draw both returning Pii Nong customers and curious new visitors.

As 2026 approaches, Chon Modern Thai Cuisine stands out as one of the more interesting openings in midtown, bringing a mix of tradition, technique, and a refreshed identity to a well-known address.
