Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 1/4 cup dairy-free chocolate chips (optional)

Steps to Make Healthy Oatmeal Brownies

  1. Preheat the Oven: Set your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Prepare the Wet Ingredients: In a large bowl, mash the ripe bananas until smooth. Add the peanut butter, maple syrup, and vanilla extract. Mix until well combined.
  3. Combine the Dry Ingredients: In a separate bowl, whisk together the rolled oats, cocoa powder, baking soda, and salt.
  4. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chocolate chips.
  5. Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the brownies to cool completely in the pan before slicing into squares.

Cooking Tips

  • Sweetness Adjustment: If you prefer sweeter brownies, increase the amount of maple syrup or honey.
  • Texture Variation: For a chewier texture, use quick oats instead of rolled oats.
  • Storage: Store the brownies in an airtight container at room temperature for up to 3 days, or refrigerate for longer shelf life.
