  • Honey: 5 tablespoons
  • Lemon: 1 medium (juiced)
  • Thyme: 4 sprigs (fresh leaves)
  • Olive Oil: 2–3 tablespoons

Instructions

1. Prep the Dressing
Mix honey, lemon juice, and thyme leaves in a small bowl until smooth.

2. Layer and Marinate

  • Arrange a single layer of halloumi slices in an airtight container.
  • Drizzle the honey-lemon dressing over the top. Repeat the layers, adding dressing each time.
  • Pour any remaining dressing over the final layer. Seal the container and refrigerate for at least 1 hour (overnight is best). Flip the container occasionally for even marination.

3. Sear the Halloumi

  • Heat olive oil in a pan over medium heat. Add halloumi slices in a single layer, ensuring they don’t touch.
  • Sear for 2–3 minutes on one side until golden brown. Flip and cook the other side for about 1 minute.
  • Spoon over a bit of the dressing to glaze the cheese as it finishes cooking.

4. Plate and Serve
Transfer the seared halloumi to a serving plate. Drizzle any remaining dressing over the top for extra flavor. Garnish with fresh thyme sprigs if desired.
