Shoushin: Authentic Edomae Sushi and Omakase Dining in Toronto
Shoushin, nestled in Toronto’s Bedford Park neighborhood, is more than a restaurant—it’s a journey into Edomae sushi. Since opening in 2015, Chef Jackie Lin has crafted an omakase experience here that has drawn sushi lovers from across the city. In 2022, Shoushin earned a Michelin star, a testament to its dedication to quality. The name “Shoushin” means “craftsman heart,” reflecting the artistry and care behind each dish.
The Art of Edomae Sushi
Rooted in Tokyo, Edomae sushi is a revered style focused on traditional techniques and the finest seasonal ingredients. At Shoushin, Chef Jackie Lin elevates this style, using wild-caught fish, often flown in directly from Toyosu Fish Market in Japan.
Diners experience the craft at a 200-year-old hinoki wood counter, a setting that enhances the sensory experience. With a minimalist Japanese aesthetic and omotenashi (the spirit of hospitality), Shoushin creates a haven for sushi purists.
The Omakase Experience
Shoushin offers two omakase options, each designed to showcase the best of the season:
- Sakura Omakase ($380): A prix-fixe menu that includes a selection of snacks and ten expertly crafted nigiri. This traditional omakase experience lets diners appreciate Chef Jackie’s meticulous approach to sushi.
- Obsession Perfection Omakase ($520+): This bespoke menu, designed by the chef, uses the freshest seasonal ingredients and caters to each guest’s preferences. It’s a journey of trust, giving the chef creative control to craft a unique meal for each visit. Guests can also order additional pieces to revisit favorite bites or try new selections.
Signature Dishes & Nigiri
Shoushin’s dishes range from firefly squid and creamy monkfish liver to delicate sashimi, including Spanish mackerel and squid. The nigiri course is a highlight, with flavors that progress from the milder kohada to the rich, melt-in-your-mouth anago. The rice, seasoned to complement each topping, is a blend of two varieties, offering the perfect texture. Each bite harmonizes simplicity and complexity—a signature of master sushi.
Sake & Wine Pairings
Shoushin elevates the omakase experience with carefully selected sake, wine, and spirit pairings, complementing each dish’s subtle flavors. The sake selection includes rare finds like Dassai Beyond and Daishichi Myoka Rangyoku Grand Cuvée. These pairings enhance the umami and textures of each course, deepening diners’ appreciation of Japanese flavors.
A Philosophy Rooted in Simplicity
Chef Jackie Lin believes in the beauty of simplicity—a concept that is deceptively hard to perfect. With over 20 years of experience, Chef Jackie lets each ingredient shine, bringing out its best qualities. This dedication to authenticity led him to open Shoushin, where diners experience a deeply personal omakase meal.
For Chef Jackie, omakase is about showcasing seasonal selections. His goal is to create a unique experience for each guest, crafting every dish with care and precision.
