The Carbon Bar Launches Grab-and-Go Concept This Summer
The team behind The Carbon Bar is gearing up to introduce a new concept this summer—this time with a faster pace. Set to open in summer 2025 at 460 King Street West, Carbon Snack Bar is the latest venture from owner Yannick Bigourdan, designed to bring barbecue-style food into a more casual, quick-serve format. Unlike its sit-down counterpart on Queen Street East, this new spot focuses on takeout-friendly options without sacrificing the signature flavour that made the original a downtown staple.
“We’ve been thinking about ways to share our food in a more casual way, while still sticking to the same techniques that built our reputation,” Bigourdan explains.
While The Carbon Bar gained fans with its slow-smoked meats, full-service atmosphere, and wood-fired touches, the Snack Bar takes that same DNA and applies it to an all-day menu built for grab-and-go convenience.
Quick Food, Same Technique

Carbon Snack Bar’s format is fast, but the cooking process isn’t. The kitchen will still use slow-smoking and house-prepped ingredients, just streamlined for the takeout crowd. The goal is to offer something satisfying, but fast enough for lunch breaks or busy evenings.
The menu will rotate throughout the day, featuring:
- Breakfast sandwiches layered with house-cured bacon and soft scrambled eggs
- Pulled pork empanadas with chili-lime dipping sauce
- Grain bowls and salads topped with brisket or cured salmon
- Ribs or fried chicken wraps
- Frozen barbecue meats and retail items like sauces and rubs
The patio, fully licensed, adds another layer—perfect for grabbing a quick bite or lingering with a drink. The setup offers the flexibility of a café, but with deeper flavour and more substance than typical fast food.
The Space Brings More Than Food

The Snack Bar shares space with The Carbon Bar’s event and catering wing, The Social Catering & Co. When not booked for private events, the adjoining room will be used to host tastings, pop-ups, or local events. The idea is to keep the space useful and flexible—making room for community interaction alongside the core food offerings.
“We’re thinking of this place as a hub,” says Bigourdan. “It’s fast food, but with a face. A space that can hold more than just lunch.”
Rather than acting as a second location of the flagship restaurant, the Snack Bar will carve out its own identity. Its scale is smaller, the vibe more relaxed, but the commitment to technique remains.
