Via Allegro Ristorante Marks 30 Years With Limited-Time Throwback Menu

Via Allegro Ristorante is marking 30 years in Toronto with a 30-day Throwback Menu.

The menu will run from June 25 to July 25 at the Etobicoke restaurant. It brings back seven dishes from different points in Via Allegro’s history.

The anniversary menu was created by Executive Chef Marco Zandona and Culinary Director Claudio Aprile. Together, they revisit dishes that helped shape the restaurant’s approach to Italian cooking, wine, and service.

A Menu Built From the Restaurant’s Archives

The Throwback Menu is not only a list of returning dishes. It also works as a timeline of how Via Allegro approached ingredients, presentation, and Italian cooking across different eras.

Before crudo, Amarone risotto, and game-focused pasta dishes became more common on Toronto menus, Via Allegro was already serving dishes that leaned into premium ingredients, bolder flavours, and a broader view of Italian cuisine.

The anniversary menu brings those dishes back in chronological order, giving guests a chance to revisit the restaurant’s past through food.

The Seven Returning Dishes

The 30-day menu includes seven dishes from 2002 to 2014.

  • 2002 — Veal Chops Choice & Provimi
    A French-trimmed veal chop that became closely tied to Via Allegro’s reputation for premium ingredients and large-format presentation.
  • 2005 — Italian Stallion
    A horse crudo and carpaccio dish that challenged expectations and reflected the restaurant’s willingness to take risks before crudo became common across Toronto dining rooms.
  • 2006 — Lamb Ribs & Amarone Risotto
    A pairing of lamb ribs and Amarone risotto that showed how wine could be used as a central ingredient in a dish, not only as something served beside it.
  • 2008 — Quail Saltimbocca
    A detailed take on an Italian preparation, bringing together technique, tradition, and careful plating.
  • 2013 — Pheasant Cavatelli
    Confit pheasant, preserved pear, sage cavatelli, and guanciale come together in a dish built around game, pasta, and a balance of savoury and sweet notes.
  • 2013 — Gelato Collection
    Blueberry grappa, fig Amarone, and butterscotch gelato return as a dessert trio tied to the restaurant’s beverage program.
  • 2014 — Lusty Goat
    A Genovese ragu with sweet peas and strozzapreti, bringing back a guest favourite rooted in Italian comfort food.

Chefs Behind the Anniversary Menu

Executive Chef Marco Zandona has been with Via Allegro for more than 20 years. His long connection to the kitchen gives the Throwback Menu a direct link to the restaurant’s earlier chapters.

Culinary Director Claudio Aprile, a chef, restaurateur, and former MasterChef Canada judge, joined the team three years ago. Together, Zandona and Aprile have shaped a menu that looks back without turning the anniversary into a simple rerun.

The menu reflects the dishes that helped build Via Allegro’s identity while also showing how Toronto diners have changed over the past 30 years.
